If your New Year’s resolution is to cut down on soda and choose healthier drinks, Tepache is the perfect choice. This lightly fermented Mexican beverage transforms pineapple peels and cores into a golden, fizzy, and refreshing drink that’s also good for your gut.
Traditionally sold by street vendors in clay barrels, Tepache is a low-waste, probiotic-rich drink made by fermenting pineapple scraps with brown sugar or piloncillo and spices like cinnamon and cloves. The result is a tangy, slightly sweet drink with natural fizz, similar to soda but far healthier.
Similar to kombucha or kefir, Tepache ferments quickly, though longer fermentation can increase its alcohol content to 1–3%. The process is simple: clean and peel the pineapple, soak the skin and core in water with jaggery and spices, and leave it at room temperature for 24–48 hours.
